Knead Bakery

The scent of fresh baguettes, sourdough, focaccia, danishes, muffins, hand pies and specialty cakes will waft through the air with the opening of Knead, a new bakery concept coming to Symphony Towers. University Club General Manager Brian Lee has teamed up with his former associate, Adrian Mendoza, a longtime San Diego pastry chef, to bring this mouthwatering bakery to life. Mendoza, who will be running the entire kitchen for the very first time at Knead, has worked at Wayfarer Bread & Pastry, Herringbone, Herb & Wood and Searsucker. Come break bread and give him a warm welcome.

Executive Chef

Adrian Mendoza's culinary journey started in high school, leading to culinary arts studies. He worked in fine dining, pastry, and bakery roles in California and France. Adrian honed his skills with top chefs like Wolfgang Puck and Brian Malarkey. He became an executive pastry chef at The University Club and is collaborating on a bakery concept, Knead, expected to open in late summer 2024.
